Ingredients:
• 600 g chicken breast fillets, cut into strips
• Salt and freshly ground black pepper
• 40 ml olive oil
• 6 spring onions, roughly chopped
• 2 garlic cloves, finely chopped
• 100 g broccoli, cut into small pieces
• 125 g mushrooms, halved
• 1 red pepper, cut into strips
• About 100 ml sweet-and-sour sauce
• A handful of fresh coriander, chopped
Method:
- Season the chicken strips with salt and pepper.
- Heat a little of the oil in a large frying pan and fry a small batch of the chicken strips over very high heat. Remove from the pan and repeat until all the chicken has been fried.
- Heat the remaining oil and fry all the vegetables over very high heat for about 5 minutes.
- Return the chicken to the pan and add the sweet-and-sour sauce. Heat through and season with salt and pepper. Scatter the fresh coriander on top and serve immediately.
Tip: Make your own stir-fry sauce: Mix olive oil, the juice and zest of 1 lemon, tomato sauce and chutney.
